What Is A Lentil?Lentils are a pulse crop. Pulse crops like lentils and peas arelegumes that are able to fix nitrogen from the air into the soil;this improves the environmental sustainability of the croppingsystem and reduces the need for nitrogen fertilizer. Canadais currently the world's largest exporter of lentils to the globalmarketplace, selling to over 100 countries each year. Over 99%of Canada's lentils are grown in Saskatchewan, Alberta andManitoba. But, in 2016, 30 acres of lentils were grown just outsideof Elora, Ontario!
